Feeding my homeschool family of five on a frugal budget is sometimes difficult. I try to follow a general plan of having one meal a “Meatless Monday” meal, and we love Mexican food, so “Taco Tuesday” is a weekly event as well. We typically have breakfast for dinner one night per week, and then I love Southern, traditional, home-cooked meals. These recipes reflect some of my favorites that I will be cooking this fall.
